Why take an excellent colour image and throw the colour away? Black and white allows us to see more, more character, more texture, or more emotion, for example. Black and white works across many genres of photography, and modern digital cameras allow us to have the best of both worlds. I always shoot RAW files, but I often set the camera to show a B&W preview image, as it helps find the right tones and composition.
